Ingredients
100g butter softened
175g caster sugar
2 eggs
2 ripe bananas mashed
225g self raising flour
1 tsp baking powder
2 tbsp milk
1 heaped tbsp cocoa powder
2 tbsp milk
Method
- Line a 2 lb loaf tin with non-stick baking parchment.
- Pre-heat the oven to 180°C/350°F/Gas Mark 4
- Measure all the ingredients minus the cocoa powder and 2 tablespoons of milk into a mixing bowl and beat for about two minutes, until well blended.
- Split the mixture into two bowls and add the remaining cocoa and milk into one of the bowls and mix well.
- Spoon the mixture into the prepared tin, alternating between the chocolate and the banana, and give it a little swirl if you like.
- Bake for about 45 minutes, until well risen and golden brown. A skewer inserted in the centre of the cake should come out clean.
- Leave the cake to cool in the tin for a few minutes, turn the cake out onto a cooling rack.
